The Sotol Plant also known as Desert Spoon is native to the Chihuahuan Desert. The plant looks similar to its distant cousin, the agave, and is harvested wild in the desert. The sotol plant is harvested like agave plants used for Mezcal and Tequila. The outer leaves of the plant are removed to reveal the center core (pina), which is then cooked, shredded, fermented and distilled, creating the most unique and inviting flavors.
